Maize

Maize, also known as corn, is a cereal grain that originated in southern Mexico about 9,000 years ago. It has since become a staple food in many parts of the world, including Nigeria.

  • Maize is rich in carbohydrates, providing a significant energy source. It also contains dietary fiber, which aids digestion and supports healthy gut bacteria

  • Additionally, maize provides essential vitamins and minerals, including vitamin C, folate, magnesium, phosphorus, and potassium.

  • The antioxidants lutein and zeaxanthin found in yellow maize are beneficial for eye health. Furthermore, the B-complex vitamins in maize support skin, hair, heart, and brain health.

  • In Nigerian cuisine, maize is versatile and used in various dishes such as pap (a fermented cereal pudding), tuwo masara (a maize flour dish), and roasted or boiled corn on the cob.
